Traditional Greek salad (horiatiki) uses no lettuce β just chunky tomatoes, cucumber, onion, peppers, olives, and a slab of feta. For this version, we add romaine for substance and slice the chicken on top.
The Dressing
Simple is best: extra virgin olive oil, fresh lemon juice, dried oregano, minced garlic, salt. Whisk it together. That's it. The quality of your olive oil makes all the difference here β use the best you can find.

Ingredients:
- 4 chicken breasts
- 2 heads romaine, chopped
- 4 ripe tomatoes, chunked
- 1 cucumber, sliced
- 1 red onion, sliced thin
- 200g feta cheese, sliced
- Β½ cup Kalamata olives
- ΒΌ cup olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- 2 cloves garlic
- Salt and pepper
- Fresh parsley
Instructions:
- Marinate chicken in olive oil, lemon, oregano, garlic, salt, pepper for 30+ min.
- Grill chicken over medium-high heat, 5-6 min per side.
- Rest chicken 5 min, then slice against the grain.
- Arrange romaine on plates. Top with tomatoes, cucumber, onion, olives.
- Place sliced chicken on top. Add feta slices.
- Whisk dressing ingredients. Drizzle over salad.
- Sprinkle with oregano and fresh parsley. Serve.
