  • 500g bread flour
  • 325ml warm water
  • 7g instant yeast
  • 10g salt
  • 1 tbsp olive oil
  • San Marzano tomatoes
  • 400g low-moisture mozzarella
  • 200g fresh mozzarella
  • Fresh basil
  • Toppings of choice
  • Cornmeal for dusting

Instructions:

  1. Mix flour, yeast, salt. Add water and olive oil. Mix until shaggy.
  2. Knead 8-10 min until smooth and elastic. Cover and rise 1 hour (or 24-72h in fridge).
  3. Divide into 4 balls. Rest 30 min at room temp.
  4. Preheat oven to max (250-275ยฐC) with stone/pan inside for 45 min.
  5. Stretch dough by hand into rounds โ€” don't use a rolling pin.
  6. Spread thin layer of crushed tomatoes. Add mozzarella and toppings.
  7. Slide onto hot stone. Bake 8-12 min until crust is charred and cheese bubbles.
  8. Add fresh basil and olive oil drizzle immediately. Serve hot.
