Lamb chops are one of the most elegant cuts of meat โ each one a perfect, individual serving with a beautiful bone handle. When seared to a gorgeous crust and glazed with rosemary, garlic, and balsamic, they become the kind of dish that makes any occasion feel special.
Despite their impressive appearance, lamb chops are remarkably quick to cook โ just 3-4 minutes per side for medium-rare. This makes them ideal for entertaining, as you can prep everything ahead and cook at the last minute.
Choosing Quality Lamb
Look for rack of lamb and ask your butcher to "french" the bones โ this is the elegant exposed-bone presentation. Each rack yields about 8 chops. The meat should be pink-red with a good layer of fat on the outside, which renders and bastes the meat during cooking.
The Perfect Sear
Bring chops to room temperature 30 minutes before cooking. Season generously with salt and pepper. Get a heavy pan (cast iron is ideal) screaming hot with a thin layer of oil. Sear 3-4 minutes per side for medium-rare (55ยฐC internal). Add butter, garlic, and rosemary in the final minute, basting continuously.
The Rosemary-Balsamic Glaze
Reduce balsamic vinegar with honey and rosemary until syrupy. Brush over the resting chops for a glossy, sweet-tart finish. This glaze complements lamb's natural richness perfectly and makes the presentation stunning.

Ingredients:
- 8 lamb chops (or 1 rack, frenched)
- 4 sprigs fresh rosemary
- 4 cloves garlic, smashed
- 3 tbsp olive oil
- 2 tbsp butter
- 100ml balsamic vinegar
- 2 tbsp honey
- Salt and pepper
- Fresh mint for garnish
- Roasted vegetables for serving
Instructions:
- Bring lamb to room temp (30 min). Season generously with salt and pepper.
- Heat cast iron pan until smoking. Add olive oil.
- Sear lamb chops 3-4 min first side until deeply browned.
- Flip. Add butter, rosemary sprigs, garlic to pan. Baste with melted butter.
- Cook 3 min more for medium-rare (55ยฐC internal).
- Rest on warm plate while making glaze.
- In same pan, add balsamic vinegar and honey. Reduce until syrupy, 2-3 min.
- Drizzle glaze over lamb chops. Garnish with fresh mint. Serve with roasted vegetables.
