When it's too hot to cook, these no-cook Mediterranean wraps are salvation. Packed with creamy hummus, crunchy cucumber, juicy tomatoes, briny olives, and crumbled feta โ€” bold flavors without a single minute of cooking.

Incredibly portable for packed lunches, picnics, or grab-and-go dinners. Keep components prepped in the fridge for 2-minute assembly.

Building a Great Wrap

Spread hummus across the entire tortilla โ€” it acts as glue. Layer greens as moisture barrier, then chunky ingredients in a line across center. Concentrated fillings = cleaner folds.

Quality Ingredients

Since nothing is cooked, quality matters enormously. Ripe in-season tomatoes, Greek sheep's milk feta, good Kalamata olives. For hummus: short ingredient list only.

Making Ahead

These hold up 24 hours in the fridge. Wrap tightly in foil, seam side down. Use sturdy vegetables. Place lettuce against tortilla to prevent sogginess.

Ingredients:

  • 4 large tortillas
  • 1 cup hummus
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • ยฝ cup Kalamata olives
  • 150g feta cheese
  • 1 cup mixed greens
  • ยฝ red onion, sliced
  • Fresh mint and parsley
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Dried oregano

Instructions:

  1. Lay tortillas flat. Spread hummus across entire surface.
  2. Layer mixed greens over hummus, leaving 3cm border.
  3. Arrange cucumber, tomatoes, olives, onion in a line.
  4. Crumble feta, add fresh herbs.
  5. Drizzle oil and vinegar. Sprinkle oregano, salt, pepper.
  6. Fold bottom up, sides in, roll tightly.
  7. Cut diagonally. Serve or wrap in foil.
