Ingredients:
- 4 large tortillas
- 1 cup hummus
- 1 cucumber, sliced
- 1 cup cherry tomatoes, halved
- ยฝ cup Kalamata olives
- 150g feta cheese
- 1 cup mixed greens
- ยฝ red onion, sliced
- Fresh mint and parsley
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- Dried oregano
Instructions:
- Lay tortillas flat. Spread hummus across entire surface.
- Layer mixed greens over hummus, leaving 3cm border.
- Arrange cucumber, tomatoes, olives, onion in a line.
- Crumble feta, add fresh herbs.
- Drizzle oil and vinegar. Sprinkle oregano, salt, pepper.
- Fold bottom up, sides in, roll tightly.
- Cut diagonally. Serve or wrap in foil.
